Are you in the mood for today? Heck no, its likely raining and I want to go back to bed, says everyone on a gloomy Monday. Aside from winter failing to escape us for yet another week, I’ve been hitting the kitchen with new toys and good-filthy hands. Good filthy as in full of food and tasty finger tips. So back to waking up and peeling myself out of heaven under the sheets. Snoooooze. Ok, there is a purpose for today’s epic mouth watering thought and it could be about 30 different things and the main one was the amazing lunch special. I sort of woke up starving, like did I even eat last week at all types of hungry. Ever feel a certain way about what to eat on a gloomy day? I do, all the time, duh, haa.

For some, oatmeal is comforting, potato and eggs, fried pickles, ice cream, too early for this topic.. .I think not. I love me some B/L/T. Let’s up the ante and use fresh ingredients, thick cut turkey bacon, and some light and crispy brioche bread. Finding this bread could be the most difficult part, but substitute if need be.

The epic of epics meal:

Thick cut turkey bacon could be found almost anywhere these days. Micro greens and mixed greens really give this sandwich a satisfying tasty adventure for your buds. Of course beefy thick cut tomatoes add to this combo and help enhance our senses.

I find the best way to bake my bacon is in the toaster oven. There are some basic ovens out but I opted to use my new KitchenAid, such an awesome addition to the manacle kitchen. Once the bacon is done, adjust the settings to lightly toast the brioche bread and let the amazing flavors melt in your mouth.

Bam, Boom, and Voilá.
This Monday just got better!
