Protein packed lunch

Long days at work or the early morning gym could mean a much needed protein packed lunch. If you have a chance to stop home for lunch its always good if you can whip up a hardy meal, especially one that is protein packed.

I was in the mood for fish and I had a really good workout. I usually stop off and workout during lunch and jump in the shower then grab a bite. But I just went food shopping and new I could save a little on cash. Would this mean costing myself a late walk in from lunch.., yes! But sometimes we just have to sacrifice, plus my boss is easy going when it comes to schedules and our shifts. So I figured why not take advantage of my adventure at trader joes the other day.

I pulled out the wild caught whiting fish and gathered up some seasoning. In this case I wanted Mrs Dash lemon seasoning, black pepper, trader jokes 21 salute seasoning. Olive oil is a must! So I added that to my fish in foil and stuck it in the oven. Yes, fish being baked is way better then fried. But by adding your good fatty olive oil it’ll still have the flavor you are looking for.

Now, after your 6 minutes in the oven your fish should be done! Part of the reason I chose fish on my lunch break is cause it takes 6 minutes. You can throw your corn tortillas in the oven while the fish is cooking or just wait. Either way they will take about 2 minutes to heat up. Throw some low sodium TJ spicy peanut dressing and siracha sauce for the spice, then lay your fish on a bed of heated greens of your choice. Dice up those tomatoes and your protein packed lunch, fish burrito is cooked! Now off to work!
