That moment when you look at your calendar and realize this past weekend was the actual last summer weekend…sigh. slowly reach for the weather app and learn it’s still warm as heck out. What to do? I popped out of bed, no, I literally did. Threw a few jabs, punches, and ended with a kick in mid-air. Flopped back on the bed and stared and the ceiling. Yo, the only way to grind out the last summer Monday is to own it. Who cares that the weekend is over. And as for work, whatevs, that too shall pass. Today is the start of the countdown to chill weather. You know cause I know you know what’s about to go down, B.L.T mancave style. Vegan style with some serious twists.

Real quick:
Soy bacon (or reg or turkey)
Fresh spinach
Tomato
Avocado
Spicy mayo (mayo with brown mustard)

OK check this before we go any further.

Whole wheat bread. But it has to be toasted to perfection. Do you know why the bread is so important in a B.L.T. It’s because you have to be able to chomp through all ingredients without any spillage. Otherwise a) hot mess, b) missing flavors

Soy bacon – cooked crunchy
Fresh spinach – that crunch though
Tomato – ripe, maybe even a tad green
Jackpot ingredient: Mayo: dallop with half teaspoon of brown mustard. Mix and spread on toast.
Avocado: Finally, because we know good fats and other fats combine within and add a luxurious buttery taste.

Bam, to the Boom, and Mmm Mmm Voila!
