Hey the weather has caught up with the times and Summer is knocking on our door. Hope you all had an amazing heart felt Mother’s day! So let me ask you, are you now having one of those days where you feel bloated or over stuffed from something you ate yesterday? This happens with certain foods you eat and the way they react with your body. But don’t worry, at Mancave we can correct those issues with a quick fulfilling meal that will save your pocketbook, give you the power and energy to stay alert, focused, and continue your health conscious style of eating. You can use these ingredients for meals that won’t make you feel bloated. Here’s what you need:

Ingredients

Quinoa
Wild cod
Sweet onions
Avocado
Coconut oil
Orange
Cucumber
Tomato

Let’s start with Quinoa, an under used whole grain super food. The whole grains of quinoa are never separated because when grains are refined like white breads, rice, and pasta, then most of the fiber and important nutrients are removed. It’s like eating an empty shell. No value and no benefit.

Wild cod is lean, full of protein, and tastes great. It supplies phosphorus to make energy and strong bones, magnesium which keeps your heartbeat steady, helps the immune system, and keeps blood sugar and pressure within normal levels.
Let’s get started!
Add 1 cup of water to a saucepan, half cup of Quinoa to the water right away. Start with high heat until boil. Once it’s boiling, cover, and simmer for 15 minutes.

Chop sweet onions and place on cast iron skillet lightly oiled with coconut oil or simply put foil on an oven bake sheet.
Preheat the oven to 450 degrees for frozen unsalted Cod fish -run frozen cod under warm water until defrosted. Add sea salt and black pepper or season to your taste. Squeeze fresh orange over the cod and bake on top of the sweet onions for 7-10 minutes. Garnish with cilantro and your on your way to an amazing meal.

Once quinoa is done it should no longer look spiraled. Fluff with fork and stir in a teaspoon of coconut oil and sea salt.
Chop up tomatoes and cucumbers as your side of veggies and a half orange on the side to clean your pallet. Boom, Bam, and Voilá!
