What’s for breakfast today?

  It’s funny to me how this whole wake up and eat thing we call breakfast can vary so much, yet at the same time it can be such a routine. It’s all good as long as you enjoy what you make.

  Today, I got up crazy early. I think I was starving. It’s not like I went to bed hungry. I guess it’s one of those mancave Mondays. Ya feels me. I sort of had this idea in my head and it goes a little something like this (input Run DMC -IT’S LIKE THAT intro). What if I upped the ante on protein first thing in the morning. Now, if you know me, I’m huge on eating chicken eggs. Pan fried, stir fried, scrambled, baked, over medium, definitely not ever microwaved, and especially love them poached. I’ve done eggs poached before on Mancave, so I won’t drill you on how to achieve the best poached eggs. You’ll have to check back to my previous blog on that.

  Today, this morning, we are going for the light and fluffy barely fried, high protein sorta scrambled omelet. “The dirty omelet.” No, we don’t throw the omelet on the floor and we still use clean hands, so then what gives. Well, instead of fluffifying [flu-fif-fi-ing] and beating the you-know-what out of the eggs with a fork or wisk, we will be using a technique that gives the same intentions, but visually makes the eggs look uneven with no routine. Experimental cooking at its best.

  You should grab 2 eggs, smoked salmon, broccoli Cole slaw, feta cheese,  and scallions.
This is such a crazy healthy meal with lots of protein. It seems like a bit much for your pocketbook,  but cooking at home has been proven to be so much cheaper than going out to eat. Am I right?

  First, use your favorite non stick solution, coconut oil spray, real coconut oil in the jar, extra virgin olive oil, or real butter. And not too much, we just want to give the eggs some flavor and not stick to the pan. I want to add that alternative cooking methods would be to bake the eggs or use a non-stick or ceramic pan.

Get your pan nice and hot with your choice of the aforementioned non stick solution.
Crack 2 eggs and drop them into the hot pan. Put flame on mediun. Breakfast in under 10 minutes Quickly take your fork and swirl the eggs into one another making them marble eggs. When your eggs are barely wet at the top you should turn the flame to low and flip them over. Top with amazing smoked salmon, scallions or chives, and feta cheese. Fold over the eggs to complete this sloppy Joe of an omelet.
For added ingredients you could throw on top some chopped tomatoes, onions, and freshly minced garlic. Yes, your breathe will be humming a new tune, but you will feel the ultimate in energy.
