Make an exciting lunch

Hello hello. Welcome again to another in-yo-face food dish on this lovely Monday. And how the heck did Monday come already? Ha! As I peel myself off the bed. Nah, I jump. You should try it sometime. Then do like 10 push ups and a sprint down the hallway. As I catch my breath I just stand in front of the full mirror and ask myself if I’m happy with the way I look. Of course, we should all love ourselves first before anything else. Am I right? High five to that. PSHH*

There comes a time in the morning when your stomach reaches up and sucker punches you and says feed me mofo.

So here goes: for lunch, or breakfast you may generally have the norm, but on days like today, lunch should be exciting. Taco Tuesday? Why wait. Go against the grain. With chopped turkey meat, corn tortillas, asparagus, and some dip, you can’t go wrong.

Here’s what I did. I went to trader Joe’s am bought the following:
Turkey meat, cilantro, feta cheese, asparagus, hemp seeds, and walnut &roast red pepper dip.

The quick and easy, but not the best healthiest way for your heart, to cook all of this is to pan fry the chopped turkey meat in your favorite spices. Otherwise, you may choose to bake this meat on a baking sheet or my favorite a cast iron skillet in the oven. Lightly fry the meat on the stove first,  then bake in the oven on 450 for 30 minutes. Should suffice. Double check all meat is browned.

Asparagus may be fried but it’s so much better baked, if you have the time. Decorate, as I call it, but really season the asparagus with extra virgin olive oil, minced garlic, black bepper, and thyme. You may add feta cheese while it’s in the oven or just wait to add after its removed.

Toast your corn tortillas.

Place all on a plate when done. Add the walnut roasted red pepper dip to the tortilla, sprinkle hemp seed on top, and pile on your turkey meat. Asparagus on the side and BAM, BOOM, AND VOILÁ!

Let us know how it all turned out. This should feed you plenty for a small amount from your pocketbook.
