It is time we kick it up a notch with some healthy, organic eating! Let’s talk about legumes. They’re not only tasty and nutritious, but packed with protein goodness. They’ll also be healthy for your heart and light on your pocketbook. A gym-goer’s/healthy eater’s/snack lover’s dream. You can go with split peas, beans, nuts, etc. However, in this recipe we’ll focus on delectable lentils.
This particular recipe is easy to make and calls for very few ingredients. You need red split lentils (most stores should sell them), some chicken stock (see chicken soup Man Cave recipe), and some red cooking wine (I used Merlot and it did the trick).
Rinse the lentils to start. Then put a little oil in a skillet and throw the lentils in to slightly toast them. For 1 cup of red lentils, add about 2.5 cups of chicken stock, and about 1/4 cup of the wine. Let that simmer on low heat until the liquid is absorbed, or for about 12 minutes.
